From Skeptic to Superfan: The Brussels Sprouts Side Dish That Stole the Show

Let me tell you a little secret: I used to be that person who turned their nose up at Brussels sprouts. I just couldn’t get on board with the whole “mini cabbage” thing—until one magical day, I decided to bake them. And wow. Let me tell you, roasted Brussels sprouts are an absolute game-changer! Add crispy bacon, a drizzle of maple syrup, and a touch of balsamic vinegar? Now you’ve got a side dish that’s downright irresistible. Sweet, smoky, crispy—it’s everything you didn’t know you needed on your plate.

These Maple Bacon Brussels Sprouts have become a staple in my kitchen, especially around the holidays. They’re quick to throw together, bursting with flavor, and pair beautifully with just about anything. Speaking of holiday side dishes, here are a few more favorites that never disappoint: Croatian Mashed Potatoes, which are full of nostalgic comfort; Creamy Mashed Potatoes for that silky, buttery goodness; Roasted Potatoes with Parmesan, Garlic, and Herbs when you want crispy and savory perfection; and Cajun Green Bean Casserole for a little spicy twist. Honestly, any of these dishes will have your table looking (and tasting) incredible.

So, whether you’re hosting Christmas dinner or just want to elevate a regular weeknight meal, give these Brussels sprouts a try. Trust me, you might just convert another Brussels sprout skeptic in your family—just like I did!

Best,

Ana

  • 4 - 5 slices bacon, chopped
  • 2 tbsp olive oil or to taste
  • 2 tbsp maple syrup or to taste
  • 1 tbsp balsamic vinegar or to taste

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the Bacon: In a skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon from the pan and drain on paper towels, but reserve about 1-2 tablespoons of bacon grease in the pan.
  • Season the Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, reserved bacon grease, salt, and black pepper until well coated.
  • Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on the prepared baking sheet. Roast for 20-25 minutes, stirring halfway through, until they are golden brown and crispy on the edges.
  • Add Maple and Bacon: Remove the Brussels sprouts from the oven, and drizzle with maple syrup and balsamic vinegar. Sprinkle the crispy bacon over the top, and toss everything together to coat evenly.
  • Serve: Transfer the Brussels sprouts to a serving dish and garnish with fresh parsley, if desired. Serve warm. Dobar tek!

  • Add Some Heat: Toss in a pinch of red pepper flakes or drizzle with sriracha for a spicy kick.
  • Make It Cheesy: Sprinkle freshly grated Parmesan or crumbled goat cheese over the sprouts before serving.
  • Sweet and Tangy Swap: Replace maple syrup with honey or pomegranate molasses for a different layer of sweetness.
  • Vegetarian-Friendly: Skip the bacon and use smoked paprika or crispy fried onions for a smoky flavor.
  • Crispy Boost: Add breadcrumbs tossed in olive oil for an extra crispy topping.
  • Citrus Zing: Squeeze fresh orange or lemon juice over the roasted sprouts for a bright, tangy finish.
