Asparagus has always been one of my favorite vegetables, and it all started with the wild asparagus I grew up eating as a child in Croatia. The wild variety has such a unique, earthy flavor - slightly bitter, yet delicious - that brings back so many good memories. While it’s hard to find wild asparagus these days, the asparagus we get at the store still holds a special place in my heart.

This Asparagus and Avocado Salad is a beautiful way to showcase asparagus. The fresh, crisp asparagus paired with creamy avocado and juicy cherry tomatoes makes for a refreshing dish that's perfect for warmer weather. It’s light, yet full of flavor, and the lemony dressing brings it all together.
