- 1/4 tsp ground turmeric or to taste
- 1/4 tsp smoked paprika or to taste (optional)
- 1 medium sweet potato peeled and diced
- 1/2 cup green lentils rinsed
- 2 cups vegetable or chicken broth
- 2 cups water
- salt to taste
- black pepper to taste
For garnish, optional:
- Fresh cilantro chopped
Instructions
- Prepare the Ingredients: Chop the onion, garlic, and sweet potato. Rinse the lentils under cold water.
- Sauté the Aromatics: Heat the olive oil in a medium pot over medium heat. Add the onion and sauté for 5 minutes until softened. Stir in the garlic, ginger, cumin, coriander, turmeric, and smoked paprika (if using). Cook for 1 minute until fragrant.
