Why Raffaello is My Go-To Christmas Treat (Especially if You Love Coconut as Much as I Do!)

I have to admit, I don’t have much of a sweet tooth, so not many desserts suit me, but anything with coconut? Yes, please! That’s why these Raffaello recipe has become a Christmas tradition in our home. The smooth white chocolate combined with buttery coconut and the crunch of a roasted almond is just perfection. The flavors are rich yet balanced, and the coconut adds that perfect tropical touch that I can never resist.

Every Christmas, I make a big batch of these to gift to my neighbours, along with other homemade goodies like Honey cookies and Croatian kiflice. They’re so easy to make, and they always look beautiful in a festive box. Plus, they don’t require much time in the kitchen, which is perfect during the busy holiday season. My neighbours love them, and I love the fact that I can share something that I enjoy so much with the people around me.

Best,

Ana

Ingredients for Raffaello recipe

  • White chocolate: Smooth and creamy, adding sweetness and richness to the mixture.
  • Butter: Provides a rich, buttery flavor and helps bind the ingredients together.
  • Coconut oil: Adds a subtle coconut flavor and helps create a smooth texture.
  • Condensed milk: Sweet and thick, giving the dessert a rich and creamy consistency.
  • Coconut shreds: Adds texture and a delicious coconut flavor, making the dessert extra tropical.
  • Roasted almonds: Crunchy and nutty, offering a perfect contrast to the creamy filling.
  • Desiccated coconut: Finely shredded and used for coating, giving the Raffaelo balls a lovely coconut finish.

Can I use milk or dark chocolate instead of white chocolate?

Yes, you can, but it will change the flavour significantly. White chocolate adds sweetness and creaminess that pairs perfectly with coconut, so switching to milk or dark chocolate will give a richer, more intense taste.

Can I make these Raffaello recipe without almonds?

Absolutely! You can omit the roasted almond in the center if you prefer or if there are nut allergies. The Raffaello balls will still taste delicious with the coconut and white chocolate combination.

How to Make Raffaello recipe

  1. Melt the Chocolate and Butter: In a heatproof bowl, add the white chocolate and butter. Place the bowl over a pot of simmering water (double boiler) or use the microwave in short intervals, stirring frequently, until the mixture is melted and smooth.
  2. Mix the Ingredients: In a large mixing bowl, combine the melted chocolate and butter with the coconut oil, condensed milk, and coconut shreds. Stir until everything is well combined.
  3. Chill the Mixture: Place the mixture in the refrigerator for about 30 minutes, or until it firms up enough to handle easily.
  4. Form the Balls: Remove the mixture from the fridge. Scoop out about 1 tablespoon of the mixture, flatten it slightly in your hand, and place one roasted almond in the center. Gently roll the mixture around the almond to form a ball.
  5. Coat with Coconut: Roll each ball in desiccated coconut until fully coated. Repeat with the remaining mixture.
  6. Chill Again: Once all the balls are formed, place them in the refrigerator for at least 15 minutes to firm up.
  7. Serve: Serve chilled and enjoy! You can store any leftovers in an airtight container in the fridge for up to a week.
