1tbspfresh parsley or thyme chopped
Instructions
Prepare the Carrots: Peel the carrots and slice them diagonally into 1/4 inch thick pieces to ensure they cook evenly.
Cook the Carrots: Bring a large pot of salted water to a boil. Add the carrots and cook for about 4-5 minutes until they are just tender but still firm to the bite. Drain the carrots and set them aside.
Make the Glaze: In a large skillet over medium heat, melt the butter. Add the brown sugar and honey to the skillet. Stir until the sugar has dissolved and the mixture is bubbly, about 2 minutes. Add the cooked carrots to the skillet. Toss to coat the carrots in the glaze. Cook for an additional 5-7 minutes, stirring occasionally, until the carrots are fully tender and the glaze has thickened.
Season: Season the glazed carrots with salt and freshly ground black pepper to taste. Adjust the seasoning as needed.
Serve: Transfer the carrots to a serving dish. If desired, sprinkle with chopped parsley or thyme for a hint of freshness and color. Serve warm as a delicious side to your favorite main dishes.
