Make the base: In a large saucepan, over medium heat, heat the olive oil, add onion and carrots. Cook for 5 - 6 minutes until slightly soften. Add tomatoe paste and cook for 1 minute, stirring. Add potatoes and cook for 1 - 2 minutes, stirring so potatoes get slightly crispy but don't stick to the pot.
Cook the lentils: Add the lentils and stock. Bring to boil then reduce the heat to simmer. Cook for 25 - 30 minutes or until potatoes and lentils are soft. Season with salt and pepper.
Cook the pasta: In the meanwhile, add water to a small saucepan and cook pasta according to package instructuins. Drain and set aside.
