Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare the Pastry: Roll out the store-bought shortcrust pastry on a lightly floured surface. Line a 9-inch pie dish with the pastry, pressing it into the edges. Trim any excess pastry hanging over the edges. Prick the base with a fork.
Blind Bake the Pastry: Line the pastry with parchment paper and fill with baking weights or dried beans. Bake for 10 minutes, then remove the weights and parchment paper and bake for another 5 minutes until lightly golden. Remove from the oven and set aside.
Prepare the Spinach Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
