Prepare the Ingredients: Chop the onion, garlic, and sweet potato. Rinse the lentils under cold water.
Sauté the Aromatics: Heat the olive oil in a medium pot over medium heat. Add the onion and sauté for 5 minutes until softened. Stir in the garlic, ginger, cumin, coriander, turmeric, and smoked paprika (if using). Cook for 1 minute until fragrant.
