Mix the Base: In a separate bowl, whisk together the lime juice, sweetened condensed milk, lime zest, and a pinch of salt until well combined.
Combine with Whipped Cream: Gently fold the lime mixture into the whipped cream, being careful not to deflate the whipped cream.
Add Digestive biscuits: Fold in the crushed Digestive biscuits, reserving some for garnish if desired.
Transfer to Freezer Container: Pour the mixture into a loaf pan or ice cream container, smoothing the top with a spatula.
Freeze: Cover the container with plastic wrap or a lid and freeze for at least 4 hours, or until the ice cream is firm.
Serve: Scoop the ice cream into bowls or cones, garnish with additional crushed biscuits and lime zest if desired, and enjoy!
