Homemade Raffaelo Balls are made of velvety white chocolate, buttery coconut shreds, and a crunchy roasted almond centre, these bite-sized treats are pure bliss. Coated in desiccated coconut for that irresistible texture, they’re the perfect balance of decadence and simplicity. Whether you’re hosting a party, looking for a sweet treat to share, or simply craving something special, these no-bake Raffaello balls are quick and easy to make.
Melt the Chocolate and Butter: In a heatproof bowl, add the white chocolate and butter. Place the bowl over a pot of simmering water (double boiler) or use the microwave in short intervals, stirring frequently, until the mixture is melted and smooth.
Mix the Ingredients: In a large mixing bowl, combine the melted chocolate and butter with the coconut oil, condensed milk, and coconut shreds. Stir until everything is well combined.
Chill the Mixture: Place the mixture in the refrigerator for about 30 minutes, or until it firms up enough to handle easily.
Form the Balls: Remove the mixture from the fridge. Scoop out about 1 tablespoon of the mixture, flatten it slightly in your hand, and place one roasted almond in the center. Gently roll the mixture around the almond to form a ball.
Coat with Coconut: Roll each ball in desiccated coconut until fully coated. Repeat with the remaining mixture.
Chill Again: Once all the balls are formed, place them in the refrigerator for at least 15 minutes to firm up.
Serve: Serve chilled and enjoy! You can store any leftovers in an airtight container in the fridge for up to a week.
