Prepare the Cucumber: Wash the cucumber thoroughly and peel it if desired. Thinly slice the cucumber into rounds. For the best results, use a mandoline slicer to ensure even, thin slices. Lay the cucumber slices on a paper towel and lightly sprinkle with salt to draw out excess moisture. Let them sit for about 10 minutes, then pat dry with another paper towel.
Make the Cream Cheese Spread: In a medium bowl, combine the softened cream cheese, mayonnaise, lemon juice, and finely chopped fresh dill. Mix until smooth and well combined. Add salt and black pepper to taste.
Assemble the Sandwiches: Lay out the bread slices on a clean surface. Spread a thin, even layer of the cream cheese mixture on each slice of bread. Arrange the cucumber slices over half of the bread slices, overlapping them slightly. If using, add thin slices of radishes on top of the cucumbers.
